In this study, by monitoring the contents of the indexes including Se, Sr, Mg, Cu, Zn, Pb, Cr, Hg, and Ni in garlic, garlic stems, garlic seedlings, and root soil in the main garlic producing areas of the eastern Tibetan Plateau, the accumulation characteristics of selenium in different parts of garlic were studied, and the nutritional quality of natural selenium-rich garlic was revealed. The results showed that by judgment based on the industry standard of selenium rich garlic, the selenium enrichment rate of garlic, garlic stems and garlic seedling was 97%, 19%, and 13%, respectively. The Se content of garlic was significantly and positively correlated with the Se content in root soil. The correlation between the Se content of the aboveground parts(garlic stems and garlic seedlings) and the Se content in root soil was significantly weaker than that between the underground part(garlic) and root soil. The enrichment coefficient of selenium in garlic,garlic stems and garlic seedling was 13%, 6.7%, and 5.7%, respectively. The selenium enrichment ability of garlic was stronger than that of garlic stems and garlic seedlings and the ability in the study area was stronger than that in other domestic areas, which proved characteristics of high bioavailability in alkaline selenium rich soil.The transport capacity of selenium from garlic roots to garlic stems was higher than that to garlic seedlings,indicating that garlic stems had a higher ability to accumulate selenium than garlic seedlings. The content of selenium in garlic was significantly positively correlated with Cu, Zn, and Cr, synergistic absorption effects could occurre. Cu, Zn, and Cr were mostly organic when they were transformed and absorbed into agricultural products by soil based on the inorganic state. Chromium(VI) which is harmful to human was at a low level. At the same time, the total amount of Cu, Zn, and Cr in soil and agricultural products in the study area was not over the standard, therefore, the selenium-enriched garlic produced in the study area was healthy and safe.
