不同灌水量对黑比诺葡萄有机酸积累及成熟期果实品质的影响
Effects of different irrigation amounts on the accumulation of organic acids and fruit quality of Pinot Noir grapes
目的 研究葡萄生长过程中有机酸的积累规律,明确不同灌水量对酿酒葡萄果实品质的影响机制。 方法 试验以树龄5 a的黑比诺葡萄为试材,设置土壤含水量为田间持水量的(40±5)%(T1)、(60±5)%(T2)、(80±5)%(T3)3个滴灌处理,以沟灌为对照(CK),设CK土壤含水量占田间持水量的(60±5)%,通过测定不同时期果实有机酸的含量、酸代谢酶活性和成熟期的品质指标,运用相关性分析、显著性分析和主成分分析,确定河西走廊武威葡萄产区适宜的灌水量。 结果 不同灌水量条件下,成熟期果实酒石酸含量T2处理比CK高14.89%,比T1、T3分别低9.69%、11.56%;苹果酸含量T2处理比CK低34.92%;柠檬酸含量T2处理比T1、T3和CK分别高38.50%、14.43%、15.07%;T2处理果实抗坏血酸含量显著高于T1、T3和CK,分别高115.85%、140.27%、94.51%。T2处理增加了成熟期果实中可溶性糖、单宁、总酚的含量,降低了可滴定酸的含量;灌水量对于可溶性固形物的影响不大。 结论 T2处理,即滴灌灌溉土壤含水量占田间持水量的(60±5)%时,黑比诺葡萄果实品质较优,建议在河西走廊武威产区酿酒葡萄种植中推广应用。
Objective The accumulation of organic acids during grape growth was studied to clarify the influence mechanism of different irrigation amount on the fruit quality of Pinot Noir grapes. Method The experiment was conducted with 5 year old Pinot noir grapes as the test material.Three drip irrigation treatments were set up to keep the soil water content at (40±5)% (T1),(60±5)% (T2),(80±5)% (T3) of the field water holding capacity.In addition,the control used furrow irrigation to keep the soil water content at (60±5) % of the field water holding capacity.By measuring the organic acid content,acid metabolizing enzyme activity and quality indexes of the fruit at different periods of maturity,and using correlation analysis,significance analysis and principal component analysis to determine the suitable irrigation water amount in the Wuwei production area of the Hexi Corridor. Result Under different irrigation conditions,the tartaric acid content of the ripe fruit in the T2 treatment was 14.89% higher than that of the control,9.69% and 11.56% lower than T1 and T3,respectively,and the malic acid content in T2 treatment was 34.92% lower than that of the control.The citric acid content of T2 treatment was 38.50%,14.43%,15.07% higher than that of T1,T3 and the control,and the ascorbic acid content of T2 treatment was significantly higher than that of T1,T3 and CK.T2 treatment was 115.85%,140.27%,94.51% higher than that of T1,T3 and the control. Conclusion It can be concluded that when the soil water content accounts for (60±5)% of the field water holding capacity,the fruit quality is better than other treatments and controls,and it can be used in wine grape planting in the Wuwei production area of the Hexi Corridor.
