屠宰型雪山鸡体尺、屠宰性能、胴体外观和肉品质的测定与相关性分析

屠宰型雪山鸡体尺、屠宰性能、胴体外观和肉品质的测定与相关性分析
Correlation analyses of body size,slaughter performance,carcass appearance and meat quality of slaughter-type Xueshan chickens
目的 为雪山鸡的保护、选育和开发利用提供支持。 方法 以110日龄屠宰型雪山鸡为研究对象,测定其体尺、屠宰性能、胴体外观和肉品质,并对其体质量、体尺、屠宰性能、肉品质进行相关性分析。 结果 雪山鸡公鸡的各项体尺指标均显著高于母鸡(P<0.05);公鸡的半净膛率显著高于母鸡(P<0.05),公、母鸡的屠宰率差异不显著(P>0.05),其他屠宰性能在不同性别之间差异极显著(P<0.01);公、母鸡背部毛孔密度显著高于腹部(P<0.05),肤色指标在不同性别之间存在极显著差异(P<0.01),母鸡的花斑问题轻于公鸡;pH1值在不同性别中差异不显著(P>0.05),其余肉品质指标在胸肌和腿肌之间存在极显著差异(P<0.01),肌肉营养成分方面仅水分和脂肪在公、母鸡之间存在极显著差异(P<0.01)。在体尺指标中,体斜长、胫围与胸深之间相关性不显著(P>0.05),其余指标之间存在显著性正相关(P<0.05),屠宰性能指标之间多数存在极显著正相关(P<0.01),但肉品质指标之间大多数相关性不显著(P>0.05),在体尺和屠宰性能之间,多数指标均存在极显著正相关(P<0.01),在体尺和肉品质之间,胸肌肉品质主要是水分和蛋白与部分体尺指标存在显著相关性(P<0.05),腿肌肉品质主要是亮度(L*)、红度(a*)、水分、脂肪、胶原蛋白和部分体尺指标存在显著相关性(P<0.05)。 结论 试验结果将为雪山鸡的进一步选育优化提供基础资料。
Objective To provide support for the protection,breeding,development and utilization of Xueshan chicken. Method The body size,slaughter performance,carcass appearance and meat quality of 110 day old slaughtered Xueshan chickens were measured,and the correlation analysis was conducted on their body weight,body size,slaughter performance and meat quality. Result The body size indexes of Xueshan rooster were significantly higher than those of hen (P<0.05);The half empty rate of cock was significantly higher than that of hen (P<0.05),the slaughter rate of cock and hen had no significant difference (P>0.05),and other slaughter performance had significant difference between different sexes (P<0.01);Pore density in the back of male and female chickens was significantly higher than that in the abdomen (P<0.05),the skin color index has extremely significant difference between different genders(P<0.01),and the spot problem of hens is lighter than that of cocks.There was no significant difference in the value of pH1 between the sexes (P>0.05),but there was a very significant difference in the other meat quality indexes between the breast muscle and leg muscle(P<0.01),and there was a very significant difference in the nutrient composition of muscle between the male and female chickens only in water and fat (P<0.01).Among the body size indexes,the correlation between body length,shin circumference and chest depth was not significant (P>0.05),and there was significant positive correlation between other indexes (P<0.05).Most of the slaughter performance indexes had extremely significant positive correlation (P<0.01),but most of the meat quality indexes had no significant correlation (P>0.05).Between body size and slaughter performance,most of the indexes had extremely significant positive correlation (P<0.01),There was a significant correlation between chest muscle quality,mainly water and protein,and some body size indexes (P<0.05),while leg muscle quality,mainly brightness (L*),redness (a*),water,fat,collagen,and some body size indexes (P<0.05). Conclusion The results will provide basic data for further breeding and optimization of Xueshan chicken.
