摘要

随着中国马铃薯加工业的发展,近年来加工总量占总产量的比例不断上升,综合考虑目前比例约为15%。文章系统比较了中外马铃薯加工业的发展现状、市场规模、主要加工产品(如薯条、薯片、全粉、淀粉)的生产与消费方面的异同,深入分析了国际市场与中国市场在技术水平、产品创新和质量控制等方面的差距,并探讨了两者面临的挑战及未来发展趋势。欧美发达国家的马铃薯加工业已相对成熟,拥有先进的加工技术、丰富的产品类型以及高度规模化与标准化的产业结构;相比之下,中国的马铃薯加工业正处于快速发展阶段,尽管加工技术不断提升,产品种类日益丰富,但仍在技术水平、设备自主化等方面存在短板,部分关键设备依赖进口。在欧美国家,受薯条作为主食的饮食文化影响,马铃薯加工比例较高。相比之下,中国传统饮食文化中马铃薯多作为蔬菜补充食材。未来,中国应基于平衡膳食理念,树立并广泛宣传“没有垃圾食品,只有垃圾饮食习惯”观念,这不仅利于推动薯条加工业发展,还能引导消费者养成科学合理的饮食习惯,实现健康饮食与产业发展的良性互动。

Abstract

With the development of the potato processing industry in China, the proportion of processed potatoes relative to total production has been steadily increasing in recent years, currently estimated at 15%. This report provides a comprehensive comparison of the development status, market size, production and consumption of major potato-processed products (such as French fries, potato chips, dehydrated potato products including potato flakes and granules and starch), between China and other countries. It analyzes the differences in technological levels, product innovation, and quality control between international and Chinese markets, and explores the challenges and future trends faced by both industries. The findings indicate that the potato processing industry in developed countries, such as those in Europe and North America, is relatively mature, characterized by advanced technology, a diverse range of products, and a high degree of industrial scale and standardization. In contrast, China's potato processing industry is in a growth phase, marked by ongoing improvements in technology and increasing product diversity. However, challenges persist, including a reliance on imported equipment and a gap in technological sophistication. In European and North American countries, where French fries are a staple part of the diet, the proportion of potato processing is relatively high. In contrast, in traditional Chinese dietary culture, potatoes are primarily consumed fresh as supplementary ingredients in vegetable dishes. Looking ahead, China should promotes the concept of a balanced diet and advocates the idea that "there are no junk foods, only unhealthy eating habits", which could not only stimulate the growth of the French fries processing industry but also guide consumers toward more scientific and balanced eating habits. This approach would foster a positive cycle between healthy eating and industrial development.
