摘要

近年来,因包装材料和生产设备广泛使用,食品中塑化剂(如邻苯二甲酸酯类PAEs)残留问题备受瞩目。塑化剂会迁移至食品中,人长期摄入可能引发内分泌干扰、生殖毒性,甚至有致癌风险,严重威胁消费者健康。为此,全球多国出台了严格限量标准,像欧盟REACH法规、中国GB 31604.30 - 2016等。不过,食品基质复杂、塑化剂种类多且痕量存在,对检测技术要求颇高。在此背景下,气相色谱 - 质谱联用技术(GC - MS)凭借自身优势,成为食品塑化剂检测的主流方法。本文先是具体阐述了GC-MS技术原理与优势,随后详细分析了如何建立与优化GC-MS检测方法,紧接着提出了具体的方法验证及其实际应用,最后进行了详细的讨论及前景展望,以期为相关研究提出有益参考与借鉴。

Abstract

In recent years, due to the extensive use of packaging materials and production equipment, the issue of plasticizer (such as phthalate esters PAEs) residues in food has attracted much attention. Plasticizers can migrate into food, and long-term human intake may cause endocrine disruption, reproductive toxicity, and even carcinogenic risks, seriously threatening consumer health. Therefore, many countries around the world have introduced strict limit standards, such as the EU REACH regulation and China’s GB 31604.30 - 2016. However, the food matrix is complex, the types of plasticizers are diverse, and trace amounts exist, which require high detection technology. Under this background, gas chromatography - mass spectrometry (GC-MS) technology, with its own advantages, has become the mainstream method for food plasticizer detection. This article first elaborates on the principle and advantages of GC-MS technology, then analyzes in detail how to establish and optimize GC-MS detection methods, subsequently proposes specific method validation and practical applications, and finally conducts a detailed discussion and outlook, with the aim of providing useful references and inspirations for related research.
