不同性别岗巴羊屠宰性能与品质性能研究
A Study of Slaughter Performance and Quality Performance of Different Sex Gangba Sheep
本试验旨在研究性别对岗巴羊屠宰性能和品质性能的影响,从西藏自治区日喀则市百亚成农牧产品加工有限公司养殖场中选取健康无病、生长发育良好的3岁岗巴羊公母各3只,测定其屠宰性能和品质性能。屠宰试验结果显示,岗巴羊母羊骨重极显著低于公羊(P 0.01),其余屠宰性能指标公母羊差异均不显著(P 0.05)。品质性能试验结果显示,岗巴羊母羊背最长肌L值显著低于公羊背最长肌(P 0.05),公羊前腿剪切力极显著高于母羊前腿(P 0.01),母羊背最长肌剪切力显著低于公羊背最长肌(P 0.05),母羊后腿硬度显著低于公羊后腿(P 0.05),母羊后腿咀嚼性极显著低于公羊后腿(P 0.01),其余食用品质差异性均不显著(P 0.05),加工品质差异性均不显著(P 0.05),营养品质差异性均不显著(P 0.05)。综上所述,性别对岗巴羊屠宰性能和品质性能均有一定影响。
This experiment aimed to study the effect of gender on the slaughter performance and quality performance of Gangba sheep, and determine the slaughter performance of three 3-year-old well-grown male and female sheep were selected from the farm of Baiyacheng Agricultural and Animal Husbandry Products Processing Co., LTD., Rikaze City, Xizang Autonomous Region. The results of slaughter test showed that the bone weight of Gangba ewes was significantly lower than that of ram (P 0.01), and the difference of other slaughter performance indicators was not significant (P 0.05). The results of the quality and performance test showed that the L value of the bar sheep ewe was significantly lower than that of the ram (P 0.05), the shear force of the front leg was significantly higher than the front leg (P 0.01), the shear force of the dorsal muscle was significantly lower than the dorsal muscle (P 0.05), and showed significantly lower stiffness than ewe hind legs (P 0.05), chewing leg of ewes was significantly lower than that of female lambs (P 0.01). Other food quality differences were not significant (P 0.05), the difference in processing quality was not significant (P 0.05), and the difference in nutritional quality was not significant (P 0.05). In conclusion, gender had an influence on both slaughter performance and quality performance of Gangba sheep.
